Abstract: | This research aimed was to evaluate the effect of lysine sources, nutritional density and calcium pidolate in broilers on growth rates, production performance, cut yield, occurrence of Wooden Breast (WB) and White Stripping (WS) myopathies , meat quality and chemical composition parameters, blood parameters and metabolites in poultry muscle. A total of 1440 day one broiler chicken from commercial incubation had been distributed in a randomized experimental design in 48 plots containing 30 birds each, with eight treatments. The experimental design for this study was a 2x2x2 factorial design 2 x 2 x 2 factorial (nutritional density x sources of lysine x presence and absence of PidolinPCa®), totaling 6 repetitions per treatment. As the birds in the experimental plots were raised on the floor system. Feed intake (FI), weight gain (WG) and feed conversion (FC) were measured to 21 and 42 days of age. The carcass yield (CY), breast yield (BY), thighs yield (TY), wings yield (WY) and abdominal fat variations were applied to the carcass characteristics. The occurrences of WB and WS myopathies were performed by three judges according to the degree of severity in the files. Meat quality was measured by weight loss by drip (WLD), pH, color (L, a e b), weight loss by cooking (WLC)) and shear force (SF). The chemical composition of the breast files was determined by means of percentages of dry matter, protein, collagen, fat and ash. From 21 and 42 days, blood was collected from the birds to determine the concentration (mg / dL) of glucose, uric acid, urea, triglycerides and cholesterol. At 42 days, a sample was taken from the breast assessment superoxide dismutase (SD) activity. The results were subjected to analysis of variation using the F test at 5% significance. How occurrences of WB and WS in the files were analyzed using the Kruskal-Wallis test with 5% significance. The growth rate of the birds was not influenced by the sources of lysine and calcium pidolate. The maximum day (Dmax) weight gain was on the 32nd day and it was observed that birds fed with diets with a high nutritional density had a higher weight gain in Dmax when compared to birds with diets low on density. The performance of the birds was influenced (P <0.05) by the feeding density, with higher GP, lower CR and better AC value in birds that received diets with a high nutritional density. There was a difference (P <0.05) for the occurrence of myopathies, with a greater occurrence of WB and WS being observed in fillets of poultry breasts fed with the lysine source HCl. There was an interaction (P <0.05) between the nutritional density and the calcium pidolate additive for parameters a and b. The blood glucose concentration was influenced (P <0.05) by the nutritional density and there was an interaction (P <0.05) between the nutritional density. The plan with high nutritional density improved the performance of the birds without predisposing the occurrence of myopathies. The occurrence of WS myopathy was higher when the lysine source HCL was used compared to the lysine source SO4. The use of calcium pidolate in the diets of birds up to 21 days of age reduces the occurrence of white stripping in the poultry breast fillet. |
