Resumo: Cassava plays an important role in feeding the world's population as well as in animal diet. Rich in starch and high in energy, it is a crucial source of carbohydrates in the diets of millions of people around the world, especially in regions where other essential foods are limited. In addition, it serves as an essential raw material in various industries, fostering direct and indirect jobs by demanding a considerable workforce in all phases of its cultivation, thus contributing to income generation. In this work, it was proposed the elaboration of a manual about cassava production, bringing updates and information about the organic cultivation of the crop. Organic cassava cultivation is a viable practice and brings topics of agricultural sustainability and environmental preservation. By adopting organic practices, farmers minimize the use of synthetic chemicals such as pesticides and fertilizers, preserving soil health and preventing contamination of water resources. In addition, organic cultivation promotes biodiversity, encouraging balanced ecosystems in which beneficial organisms are preserved, contributing to the balance and control of pests without aggression to the farmer and the environment. In the context of cassava, organic cultivation can result in healthier and more nutritious end products, as it prevents the accumulation of chemical residues on the roots. Organic practice can also improve plant resilience to climate variability, promoting adaptation to adverse conditions. Thus, this manual will provide detailed instructions on growing cassava in the organic system. In addition, it is concluded from this manual that the organic products market has more and more space and visibility, being an alternative source of value addition in production and income for large, medium and small cassava producers.
